Egusi Soup is one of the easiest Nigerian soups to make as long as you have the right steps and ingredients. You can use any or no meat to cook this and it will come out tasty and still nutritious. The recipe I use is the same one that has been passed down from my grandmother's mother to her and now its here for you. The trick in making egusi is to leave it on the fire for as long as you can. The down side is that it burns fast, so pay attention when making this.
