How to make Nigerian Jollof Rice


Nigerian Jollof rice is one of the most famous Nigerian food. Everyone struggles trying to get it right and by right I mean get it to taste like a party rice. The best part of making jollof rice is that it can taste right enough with any added ingredient of your choice.

INGREDIENTS

  • Groundnut oil
  • Chopped onions
  • Pepper and Tomato Paste
  • Butter
  • Tomato Puree
  • Per-boiled rice
  • Meat stock
  • Maggi cubes 
  • Sweet corn (optional)
  • Curry 
  • Crayfish
  • Jollof rice seasoning
STEPS
  1. Pour groundnut oil into a dry pot 
  2. Add chopped onions
  3. Add tomato and pepper paste and let it fry 
  4. Add tomato puree and allow it fry till sweet
  5. Add Maggi cubes, salt, curry and jollof rice seasoning 
  6. Add Meat stock and Butter 
  7. Stir well and allow to boil 
  8. Add pre boiled rice 
  9. Add water if necessary to allow the rice boil properly.
  10. Taste rice after 15-20 mins 
  11. When soft, add sweet corn (optional)
  12. cover pot and allow to boil till rice is soft 
Serve delicious Nigerian Jollof rice with chicken, meat, fish, moi moi.. etc and enjoy
